Rainbow trout (Oncorhynchus mykiss) is now widespread across much of the world but originally comes from North America.
It is characterized by a broad, reddish-violet stripe (the colors of the rainbow) along its sides, which is also how it got its name.
The fish spawns in the spring but has great difficulty reproducing naturally in the wild in Sweden. Rainbow trout can grow to nearly 15 kilograms, but it is typically farmed to weights between 500 and 4,000 grams.
It is a very tasty food fish, well-suited for gravlax and hot smoking. The main aspects of the farming process are similar to those for Arctic char, but the species must be treated differently due to differences in behavior and environmental requirements. Rainbow trout is also a favorite among sport fishers for its willingness to bite and its fighting spirit.
